Tonight is another one of those busy nights! (They’re all pretty busy really!) I have meetings all day, then it’s off to pick up the boys from school, hurry home, do homework, rush to a baseball game & pack our bags for morning flight. Oh yeah, and try to get some sleep in there somewhere.
Luckily I have my “best friend” the CrockPot! She’s always there when I need her ready to cook all day when I don’t have the time to do it.
I know I’m late to jump on the bandwagon, but I only tried Chipotle Mexican Grill for the first time recently. Well, let me tell you…now I’m HOOKED! I could probably eat it every day. To take the place of the deliciousness when I can’t get to the restaurant, here’s a Copycat Chipotle Carnitas recipe that I can make in my CrockPot!
We are just going to eat the carnitas with rice tonight, but it would also be yummy wrapped in a burrito with lettuce, tomatoes and beans!

Ingredients
- Whole Pork Shoulder or Pork Butt
- 2 tbsp Vegetable Oil
- 1 Onion chopped
- 2 can Rotel Tomatoes & Chiles
- 2 tbsp Minced Garlic
- 1/2 tsp Oregano
- 1/4 tsp Ground Cloves
- 2 tsp dried Chipotle Pepper
- 1 tsp Cumin
- 1 cup Beef Broth
- 1 teaspoon salt
- 1 teaspoon pepper
- 2 bay leaves
Preparations
- Heat oil in large pan and brown pork on all sides.
- Place pork in slow cooker and add remaining ingredients on top of pork.
- Cook on low 8-10 hours.
- Remove pork and shred (remove if it was not boneless).
- Remove bay leaves.
- Drain about half of the liquid.
- Add shredded pork back to juices in the crock pot.
