Brown Sugar Pork Loin

So, you know I’m a lover of meals that are not only quick, but that are delicious.  I love to use my slow cooker because it lets me come home to a home-cooked meal at the end of a long day. Not to mention “she” always makes me look like a rockstar in the kitchen!

I recently got a pork loin on sale at the grocery store.  So, of course, I hit the internet to find a new recipe because I was getting bored of my usual. I came across this great one on About.com. It just sounded so….easy. Not to mention that I had all the ingredients in my pantry already.

Brown Sugar Pork Loin

Your first steps are to rinse the pork loin, trim off the excess fat, pat dry, and rub it with garlic halves. Sprinkle salt and pepper all over and prick the loin all over with a fork or skewer.

In a cup or bowl, combine 1 cup of brown sugar, mustard, and vinegar. Rub this mixture all over the loin.

Cover and cook the pork loin in your slow cooker on LOW for 7 to 9 hours (or HIGH for 3 to 5 hours). When the time is up, pour off the excess juices.

Next, you will combine the remaining 1/3 cup of brown sugar with cinnamon; Spread the mixture over the top of the roast. Cover and continue cooking on LOW for 1 hour longer.

Yield: Serves 6 to 8

Ingredients

  • 1 boneless pork loin roast, 4 to 6 pounds
  • 1 clove garlic, halved
  • salt and pepper
  • 1 1/3 cups brown sugar, divided
  • 1 tablespoon Dijon mustard
  • 1 tablespoon balsamic vinegar
  • 1/4 teaspoon cinnamon

Preparations
